Usually, we make Upma with sooji, wheat rava, sago, semia. For a variation and curious to do an healthy breakfast, you could also try it with Samai.

Ingredients :
Millet Samai - 3/4 cup
Water - 2 cup
Onion - 1 finely chopped
Coriander leaves - few chopped
Coriander leaves - few chopped
Salt - to taste
Temper :
Oil - 1 tbl spn
Jeera - 1/4 tspn
Jeera - 1/4 tspn
Mustard -1/4 tspn
Green chilli - 1 tbl spn finely chopped
Curry leaves - 5-6 leaves
Hing - a pinch
Method :
- Place the cooker on the stove and add oil. Add tempered items as above.
- Then add onion and green chilli and add little salt. By adding salt to onion it will cook fast and it is less time consuming too.
- Meanwhile wash Samai and keep it ready.
- When Onions are transparent add water and salt. While adding salt, see to it that you add it as little as required since we added salt with onion also.
- When water starts bubbling add Samai give a quick stir and close the lid.
- When pressure starts to build, lower the flame to simmer and cook it for 10 minutes and then switch it off.
- Once pressure releases open the lid add coriander and fluff it up gently with fork. Don't use spatula for stirring as it will become sticky and lumps will be formed.
- Again close the lid and let sit for 5 more minutes (not on the stove). If you leave it on the stove, because of the heat it will become more softer. This tip is from my mom.
- Serve this on a plate and enjoy this hot Samai Upma with any chutney, pickle and sambar.
